I love Hass Avocados! I also like finding different ways to eat them. As much as I would love to eat chips and guacamole every single day, it isn’t the healthiest option. After all of the sweets around Christmas it is good to have some fresh and healthy foods each day. I had a couple of perfectly ripe avocados yesterday and some beautiful and fresh cherry tomatoes. What’s better than an avocado salad? This recipe is best made fresh and eaten right away but I did save some overnight and it was still good the next day. It can be made into 6 small side salads or 2 salads that are great for a lunch. It can also easily be cut in half. Enjoy it and share it with your friends and family!
Refreshing Avocado Salad with Tomato and Cucumber
A delicious and bright avocado salad that you’re sure to enjoy!
For the Dressing
- 3 Tbsp olive oil (extra virgin)
- 2 Tbsp fresh squeezed lemon juice ((about 1/2 of a lemon squeezed))
- 1/2 Tsp fine sea salt
- 1/4 Tsp freshly ground pepper
- 3 finely chopped fresh basil leaves (optional)
Vegetables
- 6.5 oz Cucumber ((about 3/4 of an English or Hothouse cucumber))
- 6.5 oz Cherry tomatoes (about 18-20)
- 2 Tbsp finely chopped red onion (1 ounce) (about 1/4 of a small or medium onion)
- 2 Hass Avocados
In a small bowl add the olive oil, fresh squeezed lemon juice, salt, pepper and finely chopped basil. Mix it together well with a fork or whisk. Set aside.
Dice 6.5 ounces (185 grams) of cucumber. Place into a medium sized bowl.
Slice the cherry tomatoes in half (or quarters for larger ones). Place tomatoes in the bowl with the cucumber.
Finely chop 2 Tbsp of red onion and place it in the bowl with the cucumbers and tomatoes.
Peel and remove the pits from 2 Hass avocados.
Dice the avocados.
Add the avocados to the bowl and gently stir the vegetables together.
Add 1/2 – 3/4 of the dressing to the salad and gently stir it in. Add more as needed to taste. You may want all of it or find that a little less is how you like it. I used just over 3/4 of it.
Make sure the salad is evenly mixed.
Serve and Enjoy!
The calories per serving will vary some based on the size of avocado and amount of dressing used. If you divide it into 6 side salads it will be around 150 calories per serving. The avocados I used were just over 9 ounces total after peeling and pitting them. Each serving was around 145 calories.
