This recipe is so easy and delicious! One of the best parts? You’ll only need 4 ingredients! Lately, I’ve been trying out different combinations and ways to serve fresh fruit and vegetables. For some reason, one of my kids has stopped eating most fruits. I ask why and they just say they don’t like them. I’m not sure if it is just boredom with the same fruits or not wanting to peel an orange. So, I decided to try a citrus salad. This kid also happens to love pineapple so I thought it would be a great addition with the citrus. All the sudden they do like oranges! The sweet pineapple helps balance out the sour grapefruit and I really love the flavors of everything blended together.
When it comes to pineapple, fresh is best. If you are picking out a pineapple at the store and want to use it right away then you’ll want one that isn’t completely bright green. As it ripens it will turn more golden and have a little give when you press on the sides. For the citrus, I used red grapefruit along with clementines and navel oranges. It really is fast, easy and healthy! I hope you enjoy it!
Simple Pineapple Citrus Salad
It is so simple it almost is hard to call it a recipe! You’ll love the combination of flavors!
- 1 pineapple ((I used a small golden pineapple – 250 grams)
- 2 red grapefruits
- 4 clementines
- 2 navel oranges
Peel and core the pineapple.
Cut the pineapple into bite size chunks and add it to a large bowl.
Using a sharp knife, cut the top and bottom off of the grapefruit. Carefully cut the peel off from the sides.
Carefully cut out the fruit segments of grapefruit between the white pith. Remove any seeds.
Add the grapefruit to the pineapple in the bowl.
Peel the clementines and slice them in half, removing any seeds.
Add the clementines to the bowl.
Peel the navel oranges. Slice them as thin as you can while keeping them in a ring. (about a cm or so) Remove any seeds.
Add the orange slices to the bowl. Gently stir the fruits together.
