Tasty Cinnamon Mini Muffins

These muffins are light and fluffy with a nice amount of cinnamon! When it comes to cinnamon I do have a favorite. It is a King Arthur Flour cinnamon. Here is a link for their Vietnamese cinnamon. It is delicious and has given a flavorful boost to my recipes.

This recipe will give you around 50-55 mini muffins. It may sound like a lot but they are bite sized and scrumptious and not hard to polish off. I hope you enjoy them! You can also make regular sized muffins but you won’t need quite as much of the cinnamon and sugar mixture on top. There are recipe instructions in the notes if you’d prefer the larger size muffins.

Mini Cinnamon Muffins

Deliciously Light and Fluffy cinnamon mini muffins.

  • 2 cups all purpose flour (8.5 ounces or 240 grams)
  • 3/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 4 1/2 ounces unsalted butter (room temperature) (128 grams)
  • 3/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 1/2 tsp vanilla extract
  • 3/4 cup milk
  • 1/3 cup Greek yogurt (plain or vanilla)
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon
  1. Preheat your oven to 400 F / 200 C

  2. Prepare the mini muffin tray with liners.

  3. Add the 1/4 cup of sugar and 1 tsp of cinnamon to a small bowl. Stir it together and set aside. You will be sprinkling the batter with the cinnamon sugar just before putting the tray into the oven.



  4. Stir together the 2 cups of flour, cinnamon, salt and baking powder in a small bowl and set aside.



  5. Beat together the butter and sugar on medium speed for 2-3 minutes.



  6. Beat in the egg and vanilla and scrape the bowl as needed.



  7. With the mixer on low, add the yogurt and mix. Scrape the bowl and mix again on low.



  8. With the mixer on low start adding the flour. Add about 1/3 of the flour mixture.



  9. Keep the mixer on low speed and add in half of the milk slowly. Alternate adding the flour and milk. Once it is all added turn off the mixer and scrape the bottom of the bowl and stir to make sure the batter is evenly mixed.



  10. Scoop or spoon the batter into prepared liners filling them about 3/4 full. I used a little over 1 Tbsp per muffin. You should have a total of 50-55 mini muffins.



  11. Sprinkle the top of the batter of each muffin with a little less than 1/8 tsp of the cinnamon sugar mixture.



  12. You will have a little cinnamon sugar mix left when you are finished sprinkling all of them.



  13. Bake the muffins for 13-15 minutes. They will puff up beautifully.



  14. Let the muffins cool and enjoy!



This recipe will yield full 15-16 full size muffins. Sprinkle each with about 1/2 tsp of the cinnamon sugar mixture. (You’ll have some sugar left at the end. ) The calories for a full sized muffin are about 160. They will need to bake from 14-16 minutes.
