It’s the New Year! Let’s Talk Healthy Breakfast!

In January every year I see social media light up with everyone’s pictures of healthy meals and snacks. Sometimes I am inspired to try new recipes or foods that just look delicious! Everyone has renewed conviction to get in shape and shed those pounds from delightful treats and meals at the end of the year. So, I thought it would be fun to share some of the healthy breakfasts I enjoy eating.

Some people are breakfast people and some are not. I am definitely a breakfast person. When someone tells me they don’t eat breakfast I just don’t understand. I‘m not talking about huge breakfasts everyday with bacon, waffles, pancakes and French toast. I love all those things but I reserve them for Breakfast for Dinner nights when I have a little more time to make them. While I do like cereal once in awhile, that is mostly because it is fast and convenient. When I eat the serving size listed on a cereal box I feel like I’m not getting enough food and I’m also pretty hungry a short time later. I have found that omelettes or eggs with veggies not only taste better but also stay with me longer. I also enjoy yogurt with muesli. These are my favorite healthy breakfasts!

One of the things I like to make are omelettes. Often, I make a 2 egg omelette with some scallions and goat cheese. I really enjoy the creamy goat cheese and also that is about 70 calories per ounce instead of 110+ calories per ounce for cheddar. If you haven’t yet, give goat cheese a try! I also have a piece of fruit and sometimes some sautéed veggies on the side.

Another healthy option I love is sautéed veggies with 2 fried eggs on top. I use a little butter or coconut oil to sauté the veggies. One of the things I like about this breakfast adding whatever veggies I have on hand. I use combinations of zucchini(courgette), summer squash, peppers, spinach, tomatoes, scallions or whatever else is in season and sounds good. I always add the tomatoes at the last minute or so. This way they stay intact and just warm up a little. I season the veggies as I sauté them with a little salt and pepper. I usually top the veggies with some freshly grated parmesan and then fried eggs on top. If you don’t like cooked veggies then this one isn’t for you. I love it but the rest of my family isn’t so keen on a plate of eggs and veggies to start their day.

If you don’t like fried eggs then you can of course scramble them or prepare them whichever way you like best! Eggs and avocado are another winning breakfast combination.

Another great option is muesli. I like it mixed into yogurt. There are so may great recipes online to make your own and you can customize your favorite flavors. The muesli isn’t overly sweet as the sweetness comes from dried fruits. Because it is uncooked I like adding to yogurt in the fridge overnight to soften. This is another breakfast that stays with me longer and I feel good about eating. Sometimes I add fresh fruit or a sprinkle of desiccated coconut. Delicious! I prefer Greek yogurt but you can use your favorite. I also like granola but it is a little different flavor. It is crunchy from being baked and usually is a little sweeter.

This was a small bowl that I had in addition to a couple of eggs. It was about 165 calories and a nice addition to breakfast.
