The inspiration for this recipe started with a school class breakfast for my daughter. She wanted to bring in muffins and happens to loves dark chocolate and cranberries. These two flavors work really well together in this muffin recipe. While I like cranberries once in awhile I am always a fan of dark chocolate. I’m glad she wanted cranberries because they add a nice tart flavor that compliments the sweetness of the chocolate. These muffins are moist and they are delicious. They are also a nice change of pace once in awhile from the usual banana, blueberry and chocolate muffins.
Cranberry Dark Chocolate Chip Muffins
A tasty muffin with the sweetness of chocolate and tartness of cranberry.
- 2 cups +1 Tbsp all purpose flour
- 3/4 tsp salt
- 1 1/2 tbsp baking powder
- 4.5 ounces unsalted butter at room temperature (or 128 grams )
- 3/4 cups granulated sugar
- 1 large egg (room temperature)
- 1.5 tsp vanilla
- 3/4 cup milk
- 1/3 cup plain greek yogurt
- 3.5 ounces dried cranberries (100 grams)
- 4.25 ounces dark chocolate chips (120 grams)
- Preheat your oven to 400 F / 200 C
- Prepare the muffin tray with liners.
- Stir together the 2 cups of flour, salt and baking powder in a small bowl and set aside.

- In another small bowl add the chocolate chips and cranberries with about 1 tbsp of flour. Toss these together to coat the chocolate and cranberries. Set aside.

- Beat together the butter and sugar on medium speed for 2-3 minutes.

- Beat in the egg and scrape the bowl as needed.
- Add the vanilla and mix on medium speed to incorporate.
- With the mixer on low, add the yogurt and mix. Scrape the bowl and mix again on low.
- Keep the mixer on low speed and add in the milk slowly. The mixture may look like it is not coming together well but once you start adding the flour it will all come together to form a nice thick batter.

- With the mixer on low start adding the flour about 1/2 cup at a time. Once it is all added turn off the mixer and scrape the bottom of the bowl just a little to make sure the batter is evenly mixed.

- Stir the chocolate chips and cranberries into the batter gently until just distributed.

- Scoop or spoon the batter into prepared liners filling them about 3/4 full.

- Bake for 18-22 minutes. The tops will turn golden and a toothpick inserted in the middle will come out clean when they are done.
